How to Carry Food Trays on the Shoulder

The sight of a waiter or waitress carrying a tray of food or drinks on the shoulder is quite impressive. It looks professional and confident. It also looks quite a nerve-wracking feat to the novice member of the waiting staff. It is a skill, and like most skills, it improves and becomes much easier with practice. Waiting staff carry trays in this way because the shoulder is a stable part of the body. Additionally, when customers are seated, the shoulder position is clear of people's heads. With practice, you can master the skill of carrying a tray on your shoulder.

    Check that the pathway through the restaurant is clear. Ensure that the floor is clear of spills and that any carpeted areas are free from defect. Load the tray carefully. It is better to ask for help or make two trips to the table rather than have an accident because your load is too heavy. Make sure the tray is dry.

    Load the tray carefully. Place heavier items toward the center and lighter items at the edge. Lift the tray from the center. Use the palm of your hand to support the tray and use your fingers to grip the edge of the tray. Lift the tray up first with your hand, then ease it back onto your shoulder. Keep your hand underneath the front center of the tray as you walk.

    Move your whole body, not just your arm and the tray if you need to turn. Be careful of sharp corners or anything that will distract you and upset your balance. When you get to the table, place the tray on a tray jack or stand. Bend your knees and lift the tray down, using both hands to steady it.
